Goat Karahi (Mutton Karahi): Easy Restaurant-Style Recipe
Goat karahi (also called mutton karahi) is a Pakistani and North Indian favourite: tender goat cooked in a wok-like karahi with tomatoes, ginger, garlic and green chillies. There is no onion paste and no cream, so the flavour of the meat really shines.
What to buy
- Bone-in goat for the best flavour: Goat Mix Plate (With Bone) or Goat Mix Plate (All Muscles)
- A ready karahi mix if you like: Shan Karahi Spice Mix or National Karahi Gosht Spice Mix
- Coriander powder and whole coriander
Ingredients (serves 4 to 5)
- 1 kg (about 2.2 lb) bone-in goat, cut into curry pieces
- 1/2 cup oil or ghee
- 5 to 6 medium tomatoes, chopped (about 600 g)
- 1.5 tablespoons ginger and garlic paste, plus a thumb of ginger cut into thin strips
- 4 to 6 green chillies, slit
- 1 teaspoon red chilli powder, 1 teaspoon coriander powder, 1/2 teaspoon turmeric
- 1 teaspoon crushed black pepper and 1 teaspoon roasted crushed cumin
- Salt to taste, 1/4 cup plain yogurt (optional) and fresh coriander to finish
Using a ready karahi mix? Use about 2 to 3 tablespoons in place of the powdered spices and taste before adding extra salt.
Method
- Seal the meat. Heat the oil in a karahi or heavy pan. Add the goat and ginger and garlic paste and fry on high heat for 8 to 10 minutes until the meat changes colour.
- Cook until tender. Add salt and about 1.5 cups of water. Cover and cook on low heat for 1 to 1.5 hours, or about 30 to 35 minutes in a pressure cooker, until the meat is nearly tender.
- Add tomatoes. Add the tomatoes, red chilli, coriander and turmeric. Cook uncovered on medium-high heat, stirring, until the tomatoes break down completely and the oil separates, about 15 minutes.
- Finish. Stir in the yogurt (if using), black pepper, cumin, green chillies and ginger strips. Cook for 5 more minutes.
- Serve. Top with fresh coriander and serve hot with naan or roti.
Tips
- Bone-in goat gives a richer, thicker gravy than boneless.
- Cook on high heat at the end so the masala clings to the meat. That is the restaurant touch.
