Chicken Karahi Recipe: Restaurant Style at Home

Karahi is named after the wok-like pan it is cooked in. It is fast, bold and full of fresh tomato, ginger and green chilli flavour. You can have it on the table in about 40 minutes.

Which chicken to buy

Bone-in chicken pieces give the best flavour. Ask for small pieces so they cook quickly and soak up the masala.

Ingredients (serves 4)

  • 1 kg (about 2.2 lb) halal chicken, skinless, cut into small pieces
  • 1/3 cup oil or ghee
  • 1 tablespoon ginger paste and 1 tablespoon garlic paste
  • 4 to 5 medium tomatoes, chopped
  • 1 packet Shan Karahi Spice Mix, or try Jazaa Peshawari Karahi or Jazaa Koyla Karahi for a smoky taste
  • 4 green chillies, slit
  • A thumb of fresh ginger, cut into thin strips
  • Fresh coriander to garnish

Method

  1. Sear the chicken. Heat the oil in a karahi or wide pan on high heat. Add the chicken and cook for 5 minutes, stirring, until it turns white on all sides.
  2. Add ginger and garlic. Stir in the pastes and cook for 1 to 2 minutes.
  3. Add tomatoes and masala. Add the chopped tomatoes and the karahi masala. Cover and cook on medium heat for 10 to 15 minutes until the tomatoes are soft.
  4. Bhuno (stir-fry). Uncover, turn the heat up and keep stirring until the oil separates and the masala clings to the chicken, about 10 minutes.
  5. Finish. Add the green chillies and ginger strips, cook 2 more minutes, then garnish with coriander. Serve with naan or roti.

Make it with goat or lamb

For gosht karahi, use Goat Stew Meat or Lamb Stew Meat and the National Karahi Gosht Spice Mix. Cook the meat covered with a little water until tender (about 45 to 60 minutes) before adding the tomatoes.
