Chapli Kebab: Peshawari-Style Recipe at Home
Chapli kebabs come from Peshawar. They are large, flat kebabs made with minced meat, onion, tomato and crushed whole spices, then shallow-fried until the edges are crispy. They are perfect with naan, raita and salad.

Ingredients (makes about 10)
- 1 kg (about 2.2 lb) halal ground beef
- 1 medium onion, finely chopped and squeezed to remove water
- 2 medium tomatoes, finely chopped (keep a few thin slices for the top, optional)
- 1 tablespoon ginger and garlic paste
- 2 to 3 green chillies and a handful of fresh coriander, finely chopped
- 1 tablespoon crushed coriander seeds, 1 tablespoon crushed anardana, 1 teaspoon crushed cumin
- 1 teaspoon red chilli flakes, salt to taste
- 1 egg and 2 tablespoons cornflour (corn starch) or gram flour to bind
- Oil for shallow frying
Using a ready chapli kebab mix? Use the amount on the box in place of the dry spices and skip extra salt until you taste.
Method
- Mix. Combine all the ingredients except the oil. Mix well with your hands for 2 to 3 minutes. Chill for 30 minutes so the mixture firms up.
- Shape. With wet hands, flatten portions into thin rounds about 1 cm (1/2 inch) thick. Press a tomato slice on top if you like.
- Fry. Heat about 1 cm of oil in a wide pan on medium heat. Fry the kebabs for 4 to 5 minutes per side until deep brown and crisp, and cooked through (71°C / 160°F inside).
- Serve. Drain on paper towel and serve hot with naan, raita and sliced onions.
Tips
- Squeeze the water out of the onion and tomato, or the kebabs may break.
- Keep the meat cold and the pan hot for the crispiest edges.
- Raw shaped kebabs freeze well. Freeze flat on a tray, then pack, and fry from frozen on lower heat.
