Seekh Kebab Recipe: Juicy Kebabs in the Oven or on the Grill

Seekh kebabs are long, spiced kebabs made from minced meat and cooked on skewers. They are perfect for BBQ season, parties and quick weeknight dinners with naan and chutney.

Ingredients (makes about 12 kebabs)

Method

  1. Mix. Combine everything in a bowl and knead for 3 to 4 minutes until sticky. This is what stops kebabs falling off the skewer.
  2. Rest. Cover and chill for 30 minutes.
  3. Shape. With wet hands, press a handful of mixture around each skewer into a long, even sausage shape.
  4. Cook. Oven: 220°C (425°F) on a rack for 15 to 18 minutes, turning once. BBQ: medium-high heat for 10 to 12 minutes, turning often. Pan: shape without skewers and fry in a little oil, 4 to 5 minutes per side.
  5. Serve. Brush with a little melted butter and serve with naan, sliced onions, lemon and mint chutney.

Tips

  • Squeeze all the water out of the onion, otherwise the kebabs can break.
  • Uncooked kebabs freeze well. Freeze on a tray, then bag them.
